High Folate Green Peas Soup


I love cooking legumes because they are so chockful of nutrients, namely protein, folate and molybdenum (which supports our health system).

Hulled barley, also known as Barley groats, is the whole grain form of barley with only the outermost layer removed. It's the most nutritious type of barley.

The classic green peas soup is simple, usually just green peas and ham. Since I am not a big fan of processed meat, here's my version.

Suitable for the whole family.

Ingredients:

  • Split green peas, 1 cup

  • Hulled Barley, 3/4 cup

  • Sweet potato, 2 small ones

  • Potato, 1 medium one

  • Roast chicken carcass

  • Chicken breast, shredded

  • Garlic, 1 head

  • Sea salt, 2 teaspoon

  • Cumin, to taste

  • Water, 3.5 liter

Instruction:

  1. Wash all ingredients and bring to boil for at least 40-60 mins. That's it! The longer you boil, the softer the hulled barley will be. 40 mins will yield chewy hulled barley. Green peas break down fast.

I boiled for 40 mins in the morning. Added more green peas and hulled barley in when I heat up for 20 mins in the evening. The new addition remain crunchy. If you like them to break down into part of the soup, don't add new stuff in the second round.
